Today was bibimbap which means mixed cooked rice. Maangchi's version had a LOT of stuff, much more than I usually put in when I make it. She had a few things I have not tried before like cooked cucumbers, bellflower root and fernbrake. It was nice that I already made bellflower root and fernbrake as sides and had them ready in the fridge. The quick cooked cucumbers was new. It was like zucchini but more watery. Very interesting. Quick cook all the ingredients separately, arrange them in the bowl nicely, add the egg, sauce and mix it all up.
The only change I made was I fried a whole egg instead of adding just a raw egg yolk. I didn't feel comfortable with the raw yolk especially because I wasn't serving it in the stone bowl which keeps it all piping hot.
So yummy and filling! Seriously, a fried egg on any dish elevates it several levels. If you try to make this dish, do not feel like you need to have these exact ingredients. Use whatever you have in the refrigerator. Maangchi's version had beef, spinach, soybean sprouts, carrots, zucchini, red bell peppers, cucumbers, bellflower root and fernbrake. Each one lends its own flavor and texture to the mixed bowl.
When I made it in the past I only put in meat, spinach, carrots, mushrooms, onions and fried egg. The gochujang sauce is a must and the egg. Use what you have. It'll be delicious!!
Tomorrow I will make hoedeopbap again but this time with raw fish. Very excited!
I decided that I will keep up this challenge but at a slower pace. I think my tummy was bigger than my reality. Shopping and prepping is exhausting even though the end product is SO worth it. Next week I'll tackle a couple noodle or stews. We'll see. Can't wait! Stay tuned!
