Garlic chives, Allium tuberosum, is such a wonderful ingredient that is super easy to grow and to use! Unlike common chives which are hollow like green onions, the blades are like solid and succulent. They have a tender texture and a mild garlic flavor. Koreans use it in kimchi. I use it in my dumpling fillings or simply stir fry it with eggs and oyster sauce and enjoy with rice. Quick and easy and so delicious!

Garlic Chives with Eggs
Ingredients (side dish for 4?)
3 Tablespoons vegetable oil or other non flavored oil like avocado oil
1 large bunch (maybe 1.5 lbs) fresh garlic chives, chopped into 1/2" pieces
3 Tablespoons oyster sauce
2 eggs
Directions
Heat a large heavy bottomed skillet over medium high heat. Add oil. When oil is shimmery, add the garlic chives and stir until wilted and cooked, about 2-3 minutes. Stir constantly. Add oyster sauce and eggs and stir until eggs are cooked through. Do not overcook. Turn off heat and enjoy with a bowl of steamed rice.
