There is a plethora of dipping sauces that enhance the main dish and customize to your taste. This ginger and scallion oil is one of my favorite. It is salty, gingery, and fragrant. Such a simple and clean taste that makes anything it is on taste that much better.
If I'm totally honest, I would even put a scoop of this ginger and scallion oil on a bowl of hot white rice...oh-so-good!
Ginger and Scallion Oil
Ingredients (makes 2/3 cup)
3-4 Tablespoons fresh ginger, grated
3 stalks scallions, finely sliced
3/4 teaspoon salt
1/2 cup oil, vegetable, peanut or canola
Directions
In a small heatproof bowl, add and mix together ginger, scallions and salt. In a small saucepan over medium high heat, heat 1/2 cup oil. When the oil gets shimmery, about 2-3 minutes, carefully pour over ginger and scallion mixture. Be careful because it may bubble up a bit. Mix and set aside to cool until needed. Store unused portion in an airtight container in the refrigerator.
This is definitely a favorite in our house too! We use it on everything even congee, rice and fish. SO super simple with lots of flavor!
I made this originally to go with chicken breast, but we soon realized it goes well with anything - noodles, rice, veggies, other meats. Another insanely easy and delicious dish. We’re going to be keeping this on hand more often! My husband says he feels like I’ve transported him to a Cantonese restaurant with this sauce.
