This is the classic filling for one of the most popular dim sum - har gow. The plump shrimp are crispy and soft at the same time and complimented by the texture of the bamboo shoots. It is delicately flavored with ginger and white pepper with just the barest hint of sesame.
Shrimp Dumpling Filling
Ingredients (makes about 1 1/2 cups)
Shrimp filling
1/2 pound raw shrimp (225g), peeled, de-veined and patted dry, chopped into 1/2" pieces
1 tablespoon vegetable oil
1/4 teaspoon white pepper
1/2 teaspoon sesame oil
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ginger, grated
1/4 cup bamboo shoots, finely chopped
Directions
In a mixing bowl mix all of the ingredients. Cover and refrigerate until needed.
