Soft and smooth like flan, steamed eggs is warm and comforting and a perfect way to start the day. Top it with some chili oil and you've got a great way to kick-start your morning!
When we were in China picking up my oldest daughter, I remember having steamed eggs every morning at breakfast along with congee. It is soft and velvety smooth. What baby or adult wouldn't love it! I still make this comforting dish for my family to this day.
Delicious as is or top with some soy sauce, sesame oil or chili oil for a bit more punch. Take your time to cook gently or it'll get bubbles and have a more spongy texture.
Steamed Eggs
Ingredients (serves 4)
4 eggs (200 ml)
400 ml water
1/2 tsp salt
1/2 tsp sesame oil
1/2 tsp soy sauce
1/4 tsp white pepper
Directions
Prepare dipping sauce. In a small bowl, add all of the ingredients mixing until the sugar is dissolved. Cover and set aside until needed.
In a medium mixing bowl, add all the ingredients for the filling and mix until evenly distributed. If you want you can scoop a Tablespoon of filling and microwave for 30 seconds on high to taste and adjust to your preference.
Serving suggestion, serve with a bit of soy and/or homemade chili oil! Yum!
