Peanuts work so well in sweet and savory dishes. This peanut filling is sweet and still has a nice crunch adding texture to whatever delicious soft wrapper that surrounds it.
Peanut Filling
Suggested filling in dragon's beard candy, tong yuen and mochi
Ingredients (makes 1 cup)
1 cup whole, roasted
4 Tablespoons sugar
4 Tablespoons peanut butter, softened butter or softened coconut oil
Directions
Process the peanuts and sugar in a blender or food processor until very fine. Transfer to a small bowl. Stir in peanut butter, butter or coconut oil until it forms a loose, crumbly paste. Add more peanut butter, butter or coconut oil if you want the filling to stick together more. Use immediately or place in a zip top bag or an air tight container and refrigerate up to 3 days.
