This is a great sauce to go with Hainanese chicken rice, as a dipping sauce for other meats or as a glaze over salmon. It is dark, rich, sweet and salty and the sugar in it makes it glisten as it coats.
Sauce Sweet Soy
Ingredients (makes 1/3 cup)
2 Tablespoons sugar (or a couple small chunks of rock sugar)
3 Tablespoons water
1/4 cup soy sauce
1 Tbs dark soy sauce
Directions
In a small saucepan mix sugar and water. Heat on medium low and stir constantly until sugar is dissolved. Remove from heat. Add soy sauces and mix to combine. Transfer to a small bowl and serve.
